Red Lentil Soup



Ingredients
Split red lentil (masoor dal),soaked - 1 cup
Basmati rice,soaked - 1/4 cup
Onions,roughly chopped - 2 medium
Carrots,roughly chopped - 2 medium
Tomatoes,roughly chopped - 2 medium
Black peppercorns, 8-10
Butter - 1 teaspoon
Garlic,chopped - 1 teaspoon
Crushed red chillies - 1 teaspoon
Salt to taste
Milk - 1/4 cup
Mint leaves,crushed 2 teaspoons

Method
Drain the lentils, rice and put into a pressure cooker. Add the onions, carrots, tomatoes, peppercorns and mix. Add four cups of water and pressure cook till the pressure is released thrice (three whistles). Allow the mixture to cool. Transfer into a blender and grind into a fine puree.

Heat the butter in a non-stick pan. Add the garlic and sauté till well browned. Add the puree, crushed red chillies, salt and milk and mix well. Add water if you feel the consistency is too thick.

Serve hot garnished with mint leaves.
